Grease Traps: Fats, Oils and Grease (FOG) Reduction

Grease discharged down the drain causes blockages and sewer overflows.  Repeated repairs and maintenance are costly to the City and are disruptive to homes and businesses. 

The City's Municipal Ordinance (Section 14.08.415) requires:

  • all commercial establishments engaged in the preparation and sale of food, have commercial garbage grinders or produce amounts of grease that have the potential to cause partial or full blockage of the sewer to install an adequately sized grease interceptor;
  • the interceptor is periodically inspected and cleaned;
  • maintenance performed is documented; and
  • documentation is available during City inspections.

Inspections

New Building or New Interceptors Inspections 

Building Inspections inspects the interceptor at installation.  Contact the Building Services Department for more information.

The City Water Department inspects the laterals connected to the interceptor. Contact the Call Center at 303-651-8416 and ask to speak to a Water Inspector.

Compliance Inspections

Routine compliance inspections are conducted by the Industrial Pretreatment Program.  These inspections also include a routine storm water inspection in which the building exterior is viewed.  Contact the Call Center at 303-651-8416 and ask to speak to the Industrial Pretreatment Coordinator.

Code Requirements

Food Services establishments must:

  • Install an adequately sized large capacity grease interceptors or grease traps
  • Routinely inspect the interceptor/trap
  • Routinely maintain the interceptor/trap.  The City suggests the unit be maintained when the tank is 25% filled with solids and grease.
  • Document all maintenance performed on the interceptor/trap.  This could be the manifest or invoice if the maintenance is done by a contract service.  This is a maintenance log if the maintenance is done by staff.
  • Have the documentation available for Compliance Inspections.
